Mild Malay Chicken Curry

Mild Malay Chicken Curry

                                              Ingredients:
                                              80g butter
                                              3 chillies chopped
                                              3 cloves Garlic Chopped
                                              1 knob ginger chopped
                                              1 tbsp curry powder
                                              12 pieces of chicken (1kg)
                                              500ml chicken stock
                                              1 tbsp worcester sauce
                                              1 tbsp chicken spice
                                              1 tbsp Portuguese chicken spice
                                              3 Large Potatoes diced
                                              2 Large carrots diced
                                              1 tbsp mixed herbs
                                              1 tbsp honey
                                              1 tsp peanut butter
                                              1 pkt Denny Mild Malay Curry Sauce
                                              1/2 tin coconut milk
                                              500 g Mushrooms sliced
                                              1 Small Butternut (cut into chunks)


Preheat oven to 220C
Saute onions, chillies, garlic and ginger in the butter.


Add curry powder and stir through


Put in all the chicken and brown

Add chicken stock and let simmer

Add chicken spice and Portuguese chicken spice and let simmer


Add the diced potatoes and carrots and stir through

Add the worcester sauce, mixed herbs, honey and peanut butter

Pour in the Denny;s Mild Malay Curry Sauce

Add the coconut milk and stir through

Throw in the mushrooms and butternut and stir through

Cover with foil and bake in oven for 60min

Bake uncovered for 15min


Serve with rice
