Mild Malay Chicken Curry
Ingredients:
80g butter
3 chillies chopped
3 cloves Garlic Chopped
1 knob ginger chopped
1 tbsp curry powder
12 pieces of chicken (1kg)
500ml chicken stock
1 tbsp worcester sauce
1 tbsp chicken spice
1 tbsp Portuguese chicken spice
3 Large Potatoes diced
2 Large carrots diced
1 tbsp mixed herbs
1 tbsp honey
1 tsp peanut butter
1 pkt Denny Mild Malay Curry Sauce
1/2 tin coconut milk
500 g Mushrooms sliced
1 Small Butternut (cut into chunks)
| Preheat oven to 220C Saute onions, chillies, garlic and ginger in the butter. |
| Add curry powder and stir through |
| Put in all the chicken and brown |
| Add chicken stock and let simmer |
| Add chicken spice and Portuguese chicken spice and let simmer |
| Add the diced potatoes and carrots and stir through |
| Add the worcester sauce, mixed herbs, honey and peanut butter |
| Pour in the Denny;s Mild Malay Curry Sauce |
| Add the coconut milk and stir through |
| Throw in the mushrooms and butternut and stir through |
| Cover with foil and bake in oven for 60min |
| Bake uncovered for 15min |
| Serve with rice |
